Steak Tortilla Cups

These Steak Tortilla Cups are absolutely fabulous, simple to make and absolutely delicious! Made with tortilla cups, steak, red peppers, green peppers, onions, cilantro, spices, guacamole and a tomato serrano sauce.  Everyone will love these!

Ingredients

  • 1 package corn tortillas
  • 2 limes
  • 2 tablespoon oil
  • capers (optional)

Steak

  • 1 lb steak sliced in very thin slices and then in half
  • ½ red pepper chopped
  • ½ green pepper chopped
  • 1 onion chopped
  • ¼ cup cilantro chopped
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • Montreal Steak seasoning sprinkled on steak or to taste

Guacamole

  • 1 avocado sliced in half, pit removed and flesh scooped out
  • salt and pepper
  • ½ lemon juiced over avocado

Tomato Serrano Sauce

  • 4 tomatoes rinsed
  • ½ onion
  • 1 serrano pepper rinsed, stem removed
  • 2 garlic cloves peeled
  • salt and pepper to taste

Instructions

Tomato Serrano Sauce

  • Preheat oven to 350 degrees.
    Take tomatoes, onion, serrano pepper and place all on a cookie sheet. Roast, charring on all sides for 15 minutes.
    Remove from oven and blend all together with garlic in a food chopper or blender.
    Cook over medium heat in a saucepan for 5 minutes. Set aside.

Guacamole

  • Cut avocado in half and remove pit.  
    Remove avocado flesh with a spoon and place in a bowl.
    Mash avocado with a fork to form a paste. 
    Sprinkle with salt, pepper and the lemon juice. Mix well together.

Making Tortilla Cups

  • Preheat oven to 350 degrees.
    With a muffin biscuit cutter, cut out two circles per corn tortilla (making 12 circles).
    Place in a 12 cup muffin tin and cook for 7 to 10 minutes.
    Watch carefully that they do not burn. They should be crispy but not burnt. 
    Take out and continue making 12 more tortilla circles. 
    Set aside until ready to use.

Steak Preparation

  • After cutting the steak, place in a bowl and season with salt, pepper, garlic powder and Montreal Steak Seasoning.

Cooking Steak

  • Heat skillet over medium heat with a few drops of oil. Cook both red and green chopped peppers. Cook for 3 minutes. 
    Add chopped onions. Cook for another 5 minutes.
    Top with cilantro and stir.
  • Add seasoned steak and mix well with vegetables. Cook for a few minutes or until steak is cooked through. Turn off stove.

Preparing Steak Tortilla Cups

  • Scoop about a teaspoon of guacamole into tortilla cups.
    Add about 1 tablespoon steak mixture over guacamole tortilla cups. Add serrano sauce to taste and top with a few capers if using. 
    Sprinkle more chopped cilantro over each Steak Tortilla Cup. Sprinkle lime juice on tortilla cups. Enjoy!

Notes

Depending how thin you sliced your steak, you may have some left over, which means more Steak Tortilla Cups!
