Irresistible Mexican Hot Bean Dip

This  Irresistible Mexican Hot Bean Dip is great for a gathering.  Deliciously blended with refried beans, monterey cheese, cheddar cheese, sour cream, cream cheese, jalapenos, scallions, smoky spices and served with tortilla chips.

Ingredients

  • 2 (16 oz) cans refried beans
  • 8 oz sour cream
  • 8 oz cream cheese
  • 1 cup cheddar cheese shredded
  • 1 cup monterey jack cheese shredded
  • 2 tablespoons chili powder
  • ½ cup scallions chopped, reserve some aside for garnish
  • 3 jalapenos chopped, may remove ribs and seeds for less heat
  • tortilla chips

Instructions

  • Preheat oven to 350 degrees (175 degrees C).
  • Mix cream cheese, sour cream and chili powder together in bowl. 
  • Combine refried beans, scallions, jalapenos, and cheddar cheese.
  • Transfer mixture to 8 x 12 inch baking dish. 
  • Top with monterey jack cheese. Bake for 20 minutes.
  • When done garnish with fresh scallions (or chopped fresh cilantro) and serve warm with tortilla chips.

Notes

This is a great dip....If dip cools and the cheese topping starts to become rubbery, simply place back in oven for a few minutes to melt cheese again.
