Crunchy Taco Ring

This Crunchy Taco Ring is perfect for Game Day, served as an appetizer for a small gathering or served for dinner with a side of refried beans.

Ingredients

  • 10 8 inch flour tortillas
  • 1 ½ cups shredded cheddar cheese
  • 1 ½ cups shredded monterey cheese or more cheddar cheese
  • 2 cups tortilla chips crushed

Ground Beef Mixture

  • 1 pound ground beef
  • 1 tablespoon olive oil or vegetable oil
  • 1 red or green bell pepper chopped
  • 1 onion chopped
  • 1 jalapeño chopped
  • 1 packet taco seasoning
  • 1 lime juiced

  • bundt pan
  • non stick cooking spray

Instructions

  • Preheat oven to 350 degrees (180 degrees C)

Ground Beef Mixture

  • In a skillet over medium heat, add a tablespoon of olive oil.  Add onions and peppers and cook for 10 minutes.
    Add the ground beef and mix together well with vegetables.  Break ground beef apart with a wooden spoon.  Cook until beef is no longer pink.
  • Add the taco seasoning and lime juice and mix well together.  Cook for another 3 minutes.
    Set beef mixture aside.

Flour Tortillas

  • Take a few flour tortillas at a time and place on top of a cutting board.  Cut off the two round sides of the tortillas.
    Then cut tortillas straight down the middle.
    You will have round end strips and straight flour tortilla strips.

Assemble Taco Ring

  • Spray a bundt pan well with non stick cooking spray.  
    Place the straight flour strips on the bottom of bundt pan in a fanning pattern.
  • Sprinkle half of the shredded cheddar cheese, followed by half of the ground beef mixture.
  • Top with more cheese again (optional).
    Top with the round sides in a fanning pattern.
  • Top with more cheese (monterey or cheedar) and the crushed tortilla chips.
  • Add the rest of the ground beef and spread out evenly.
    Add more cheddar cheese.
  • Top with the round sides of flour strips.

Cooking

  • Place in pre-heated oven for 40-45 minutes.
    Let cool for about 20 minutes.
  • Place a large enough plate on top of bundt pan and carefully invert the taco ring onto plate.
    Slice and serve with salsas of your choice and chopped scallions.
