Huevos con Papas (Mexican Style Eggs with Potatoes)

Huevos con Papas (Mexican Style Eggs with Potatoes) are a delicious and easy breakfast.  Creamy scrambled eggs folded in between potatoes and mixed veggies and served with a delicious salsa verde or salsa of your choice.

Ingredients

  • 6 eggs
  • 3 russet potatoes cubed
  • ½ cup mixed veggies chopped
  • ¼ cup red onion chopped
  • 2 scallions chopped
  • 12 corn or flour tortillas
  • salt and pepper to taste
  • 2 tablespoon oil

Instructions

  • In a skillet heat up 2 tablespoons of oil over medium heat.  
    Add potatoes and season with salt and pepper.
  • Mixed well and cover with a lid.  Cook for 5 minutes.
  • Top with peppers and onions and stir well.
    Cook for another 5-10 minutes depending on how well done you like your veggies.
  • Scramble eggs.
    Add eggs to cooked potatoes and veggies.
  • When the edges start to set use a spatula or large spoon to gently swipe the edges of the pan to form large curds.  
    Continue to do this while pausing in between to allow eggs to cook some.  
    Fold the eggs until eggs are cooked but not overcooked.  Should only take about 2 minutes.
  • Serve eggs on top of corn or flour tortillas, top with chopped scallions and sauce of your choosing.
