Puerto Rican Almojábanas

Puerto Rican Almojábanas make a quick and easy yummy snack or can be enjoyed for breakfast! Perfect with a cup of coffee or hot chocolate!

Ingredients

  • 1 cup rice flour
  • ½ cup all purpose flour
  • 2 teaspoon baking powder
  • 2 teaspoon salt
  • 2 eggs whisked
  • ½ cup milk
  • 1 tablespoon water may need a little more
  • 1 cup cheese of your choice
  • 1 tablespoon unsalted melted butter
  • vegetable or canola oil for frying

MayoKetchup Sauce

  • ½ cup mayonnaise
  • ¼ cup ketchup
  • 2 teaspoon garlic paste or finely minced garlic
  • salt to taste

Instructions

MayoKetchup Sauce

  • Mix the mayonnaise, ketchup and garlic paste in a small bowl.
  • Add salt to taste. Set aside until ready to use.

To Make Almojabanas

  • Gather all your ingredients.
    Add the rice flour, baking powder, flour and salt to a mixing bowl and mix together.
  • Whisk the eggs in a separate bowl.
  • Add the eggs to the mix and whisk the mix together.
  • Slowly start adding in the milk while at the same time mixing the mix together until all the milk is added.
  • Add the water and whisk mix until smooth.
  • Add the cheese and whisk into mix.
  • Add the melted butter and mix again.
  • Allow mix to rest for 20 minutes.
    (The mix will start to stiffen up some)
  • Add about 1½ inches deep of vegetable or canola oil to a skillet and heat over medium heat.
  • After two minutes or less test oil by adding a small drop of the mix to oil.
    If the oil sizzles, it is ready.
  • Add a heaping tablespoon of the mix to the oil and fry.
    *DO NOT make the fritters so big that they will not cook through before they brown.
  • Repeat with a few more tablespoons of the mix but do not overcrowd the pan.
  • When the fritter is golden brown on one side, flip it over and cook until golden brown on the other side.
  • Drain the fritters on a plate lined with paper towels.
    Serve immediately with mayoketchup sauce.

Notes

When getting ready to fry, DO NOT make the fritters so big that they will not cook through before they brown.
To Serve:
Once cooked serve with the mayoketchup sauce.
You can also roll the fritters with a cinnamon sugar blend or top them with honey.
These fritters are even more delicious served with coffee or hot chocolate.
