Sandwichitos de Mezcla (Puerto Rican Party Sandwiches)

- 1 4 oz jar pimiento peppers reserve the brine
- 1 can Spam
- ¾ cup cheese dip Cheez Whiz is commonly used
- salt and pepper to taste
- sandwich bread
Other Optional Ingredients
- 1-2 teaspoon garlic paste gives the mix a nice flavor
- 4 oz cream cheese can add for extra flavor or to thicken mixture
Remove the Spam from the container and cut into large chunks.
Add the pimiento peppers, cheese and spam to a blender or food processor and blend until smooth.
Add salt and pepper to taste and blend again.
Spread a layer of the mixture on the bread.
Cut the crusts off (optional) and cut the sandwiches into quarters. Serve.
Note: If you would like to thicken the mixture, add a few tablespoons of cream cheese and blend again.
To thin the mixture, add some of the brine from the peppers.
This recipe is enough for 2-3 loaves of sandwich bread.
