Sandwichitos de Mezcla (Puerto Rican Party Sandwiches)

These Sandwichitos de Mezcla (Puerto Rican Party Sandwiches) are easy, tasty and economical. Using just three ingredients, it makes the perfect appetizer, especially perfect for feeding a large group.

Ingredients

  • 1 4 oz jar pimiento peppers reserve the brine
  • 1 can Spam
  • ¾ cup cheese dip Cheez Whiz is commonly used
  • salt and pepper to taste
  • sandwich bread

Other Optional Ingredients

  • 1-2 teaspoon garlic paste gives the mix a nice flavor
  • 4 oz cream cheese can add for extra flavor or to thicken mixture

Instructions

  • Remove the Spam from the container and cut into large chunks.
  • Add the pimiento peppers, cheese and spam to a blender or food processor and blend until smooth.
  • Add salt and pepper to taste and blend again.
  • Spread a layer of the mixture on the bread.
  • Cut the crusts off (optional) and cut the sandwiches into quarters.
    Serve.

Notes

Note: If you would like to thicken the mixture, add a few tablespoons of cream cheese and blend again.
To thin the mixture, add some of the brine from the peppers.
This recipe is enough for 2-3 loaves of sandwich bread.
