Ingredients
14Ounceskielbasa sausagechopped into very small cubes
8Ouncesmushroomscoarsely chopped
1onionchopped
1pepperchopped
1roma tomatocubed
7.5Ouncescan of chipotle peppersjust 2 tbsp of adobo sauce from can
2garlic clovessliced
2Tbspolive oil
crackersof your choice
salt and pepperto taste

Instructions
Cube sausage into small cubes. In a skillet over medium heat add 2 tbsp of olive oil. Heat oil for about 4 minutes before adding sausage. Add sausage and stir every few minutes until sausage is nice and brown in color, about 5 minutes.
While sausage is cooking, chop your vegetables. Add peppers and onions to pan first and mix with sausage. After 2-4 minutes, add mushrooms and garlic. Stir all ingredients together, lower flame and cover with a lid. Cook for 5 minutes.
Add tomato and 2 tbsp chipotle adobo sauce from can of peppers. Add salt and pepper to taste. Cook for another 2-4 minutes. Garnish with cilantro if desired. Serve with crackers. Enjoy!!

Can also serve sausage mixture in small burritos wraps.
