This Turkey Croquettes recipe (Croquetas de Pavo) are perfectly delicious. Crispy on the outside and moist on the inside! Served with Salsa Verde dipping sauce.

Instructions
Cook Ground Turkey
In a skillet over medium heat add a tablespoon of oil. Saute onions and jalapeño for 4 minutes or until onions are translucent. Add chopped garlic and cook for another minute. Add the ground turkey and with a spoon, mix all ingredients together breaking ground turkey apart at the same time. Add the paprika, chili powder and nutmeg. Mix all well together and cook until well blended and brown. About 10 minutes.
Flour Sauce Mix for Turkey
In a saucepan or skillet, melt the butter over medium heat. Add milk, chicken broth and slowly add the flour constantly stirring until the sauce starts to thicken.
Combine sauce and meat mixture until it all comes together and thickens more. Mix in cilantro and salt to taste. Let meat mixture cool in the refrigerator for about 30 minutes.
Breadcrumbs and Eggs
In the meantime while the meat cools and thickens prepare the breadcrumbs. Place the toast in a chopper or blender to make breadcrumbs.Whisk the eggs.
Form Croquettes
Form croquettes by taking about a tablespoon at a time of meat mixture in your palm and forming into oval shaped or circular croquettes.
Place one croquette at a time and pass through egg mixture and then the breadcrumbs.
Continue with the rest of the mixture until all the croquettes are done.
Frying
Place about half an inch of vegetable oil into a pan or skillet. Heat over medium heat. When oil is hot, gently add a few croquettes at a time. Do not over crowd. Cook until golden brown, turning on all sides. Drain on paper towels. Serve immediately with salsa verde. Enjoy!
