Spicy Jalapeno 3 Layered Mexican Pizza Wedges
These Spicy Jalapeno 3 Layered Mexican Pizza Wedges are all kinds of yummy. Made with ground beef, refried beans, cheddar cheese, jalapenos, smoky spices and topped with scallions, tomatoes, lettuce, avocado cubes, black olives, chopped cilantro and sour cream. Yummy!
- 12 6 in corn tortillas
- 1 lb ground beef or chicken, pork or turkey
- 16 oz refried beans
- 2-3 tbsp chili powder
- 1 tbsp garlic powder can substitute 2 cloves fresh garlic, finely chopped
- 2 roma tomatoes chopped
- 3 scallions chopped
- 2 jalapeños seeded and chopped
- 8 oz sour cream
- 1 package cheddar cheese shredded
- salt to taste
- 1 avocado diced
- 2 cups lettuce shredded
- cilantro chopped
- 2 tbsp vegetable oil
- black olives sliced, optional
- black beans rinsed, drained and warmed, optional
Preheat oven to 350 degrees (175 degrees C)
In a large skillet brown the ground beef over medium heat. Break beef apart with a spoon or spatula as it's cooking.
Add chili powder, garlic powder, salt and jalapenos. Stir.
Cook for another few minutes and set aside.
Spread out 4 tortillas on a cookie sheet.
Spread refried beans on each tortilla to cover. Place a second layer of tortilla on top of each.
Add ground beef and cheese on each second layer.
Top each one once again with another tortilla.
Sprinkle with more cheese and bake for 15 minutes in oven at 350 degrees (175 degrees C).
When the pizzas are done, cut each pizza into wedges or quarters.
Garnish with lettuce, tomatoes, scallions, avocado, chopped cilantro and sour cream. Top with black beans and black olives if using. Place on a platter and serve warm. Enjoy!
