Cilantro Lime Rice

Ingredients

  • 2 cups cooked rice
  • 1/2 cup fresh cilantro or more
  • 2 garlic cloves
  • 2 tbsp oil
  • 3 tbsp fresh lime juice
  • 1/2 tsp salt
  • 1 tbsp water

Instructions

  • Cook white rice to your liking.
  • Add cilantro, garlic, lime juice, garlic, salt, oil and splash of water to a blender.  Blend until smooth.
  • Stir cilantro blend into warm rice.   
  • Serve immediately and top with fresh chopped cilantro.
