Tacos Gobernador

Tacos Gobernador are delicious cheesy shrimp tacos wrapped in crispy corn tortillas that come together in under 40 minutes!

Ingredients

  • 1 pound uncooked large shrimp de-shelled, deveined, cut into small pieces
  • 1 small onion chopped or thinly sliced
  • 1 green bell pepper or poblano cut into thin strips
  • 1 serrano pepper (optional)minced or finely chopped
  • 2-3 roma tomatoes chopped
  • 2-3 garlic cloves finely chopped
  • 3 tablespoon unsalted butter
  • 2 limes
  • 8 corn tortillas
  • 8 ounces oaxaca cheese, monterey, mozzarella or provolone cheese shredded or thinly sliced
  • 1-2 tablespoon fresh cilantro (optional) chopped
  • salt and pepper to taste

Instructions

  • Rinse the shrimp under cool water. Place on a cutting board and cut into ½ inch chunks. Set aside in the refrigerator until ready to use.
  • Saute pepper and onions in a skillet over medium heat with 3 tablespoons of butter.  Cook until onions are translucent, about 4 minutes.  
  • Add the shrimp to the mixture with juice of half a lime, salt, and pepper to taste.  Cook just until shrimp turn pink.
    Note: DO NOT overcook shrimps or they will become gummy and tough.
  • Add the tomatoes and garlic. Toss and cook for 1 minute.
  • Stir everything together one last time and cook for another 30 seconds. The mixture is ready.
  • In another skillet or comal, add a a tablespoon of butter over medium heat. When the butter melts, lower the heat some and add one or two tortillas at a time to the skillet. Top one side of the tortillas with the cheese followed by 2-3 tablespoons of the shrimp mixture. Top the tacos with more cheese.
  • Flip the other side of the taco over and allow the cheese to melt some. Flip over again and allow the cheese to melt on the other side. Repeat the process with the rest of the tortillas.
    The tacos are done!
  • Keep the cooked tacos warm in a preheated 200-degree oven.

Notes

Recipe Notes:
Cooking Shrimps: When cooking the shrimp, be careful not to overcook them or they will become tough. 
Tortillas: You can use flour tortillas instead of the corn if you prefer.
