Avocado Lime Dressing

This Avocado Lime Dressing just takes 5 minutes to make.  Super simple and easy to make.  A delicious and refreshing salad dressing.

Ingredients

  • 1 ripe avocado cut in half and pitted
  • ¼ cup olive oil
  • 1 tablespoon red wine vinegar or rice vinegar
  • ½ jalapeno
  • 2 garlic cloves peeled
  • ¼ cup fresh cilantro leaves coarsely chopped
  • 2-3 tablespoon freshly squeezed lime juice
  • 3 tablespoon water more if you would like your dressing thinner
  • salt to taste

Instructions

  • Put all ingredients except salt and avocado into a blender or food chopper.  Blend until smooth.
  • Add avocado chunks and blend again until creamy.
  • Add salt to taste.  Taste and add more if needed.  
    Done

Notes

If you would like your Avocado Lime Dressing to be thinner, add a tablespoon of water at a time and blend until you like the consistency.
