Deliciously Moist Avocado Bread

This Avocado Bread is deliciously light, moist and slightly sweet.  Perfect by itself, butter, jelly or mascarpone cheese and coffee.  Excellent loaf for the holidays.

Ingredients

  • 1 cup flour
  • ½ tsp baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon cinnamon
  • salt pinch
  • ½ cup sugar
  • ¼ cup butter room temperature
  • 1 egg
  • ¼ teaspoon vanilla
  • ½ cup avocado mashed
  • 1 teaspoon lime juice

Instructions

  • Preheat oven to 325 degrees.
  • Line a small loaf pan with parchment paper or grease with butter.
  • Mashed avocado with a fork and add to a chopper or blender.  Blend well until smooth.
  • In a medium size bowl, add the flour, baking powder, baking soda, cinnamon and salt.  Mix well with a fork or whisk and set aside.
  • In another bowl add sugar and butter.  Or add to a chopper and mix well until fluffy.
  • Add egg and vanilla to the mix of butter and sugar.
  • Add the mashed avocado and lime juice.  Mix well.
  • Slowly add flour mix and mix well making sure not to over mix.
  • Add mixture to the loaf pan and cook for 35-40 minutes in oven.
    Insert a wooden skewer or knife to make sure loaf is done.
  • Let loaf cool completely before slicing.
    Enjoy slices alone, with butter, jam or dollop of mascarpone cheese.
