Ingredients

  • 2 pounds beef cut thinly or into one inch chunks
  • 6 garlic cloves peeled
  • ¼ cup beer
  • 2 tablespoon white vinegar
  • 1 tablespoon worcestershire sauce

  • ¼ cup vegetable oil
  • 1 teaspoon cumin
  • 2 tablespoon red wine
  • 1 teaspoon achiote powder
  • salt to taste

Instructions

  • Thinly cut beef, or cut into one inch chunks, set aside in a bowl or ziploc bag.

  • Put all ingredients into a blender and blend until smooth.
Pour the marinade over beef and marinade for a minimum of 4 hours or overnight.

  • Skewer beef onto wooden or metal skewers.

Note:  Soak wooden skewers in water for 20, 30 minutes to help skewers from burning....not a necessity but certainly helps depending on your heat source!

Grilling

  • Here you have two options:
You can grill on a gas grill, on a charcoal grill using briquettes or my absolute favorite....lump charcoal.

  • Cook Chuzos for 7 minutes on one side, flip over and cook for another 7 to 10 minutes.
    Done!
  • Serve on its own or with salsas linked in post and/with/or curtido.....also in post.
    Enjoy!
