Instant Pot BBQ Chicken

Instant Pot BBQ Chicken is a delicious, easy and convenient way to make shredded chicken that can be used in so many delicious ways!

Ingredients

  • 2 chicken breasts skins removed and cut into large chunks
  • 2 thighs or drumsticks
  • 2 teaspoon Worcestershire sauce
  • ½ large onion chopped
  • 1 tablespoon chicken powder bouillon
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ tsp oregano
  • ½ teaspoon cumin
  • ½ teaspoon onion powder
  • salt to taste
  • 1 cup hickory bbq sauce
  • 1 cup chicken stock or water

Instructions

  • Rinse chicken and remove skins from chicken breasts but keep the skins on drumsticks.
    Cut breasts into large chunks.
  • Add the chicken pieces to the instant pot and top with chopped onions, spices, worcestershire sauce, bbq sauce and chicken stock or water.
  • Cook chicken for 1 hour on high.
  • After one hour, check the chicken and stir. Cook for 1 more hour.
  • Once chicken is done, remove the bones from drumsticks.
  • Stir chicken and add additional bbq sauce if you like.
    All done!
    Optional: Top with chopped white onions.
    Serve with any of the suggestions included in post.

Notes

Please note:  Your instant pot may only require 15-30 minutes cooking time.
Mine works more like a slow cooker and thus have put 2 hours cooking time, so please adjust your cooking times to your specific instant pot.
