Instructions

Shrimps

  • Follow Camarones Empanizados (Battered Fried Shrimps) recipe to prepare shrimps.
Note: Although recipe suggests to leave shrimp tails on, remove tails for this recipe.
  • After seasoning shrimps, set aside in refrigerator, do not coat with batter and cook yet.

Tomatillo Pico de Gallo

  • While shrimps are marinating, prepare the sauces.

  • Add the tomatillos, onion, pepper and cilantro to a mixing bowl.
Add salt and lime juice to bowl and stir well.
    Done. Set aside.

Jalapeño Tartar Sauce

  • Combine mayo, brine juice, chopped jalapeños, scallions, cilantro, lime juice, salt and pepper.
    Stir well.
    Done. Set aside.

Finish Preparing Shrimps

  • Continue to follow my Camarones Empanizados recipe

  • Once shrimps are cooked and drained on paper towels, prepare tostadas shells.

Homemade Tostadas

  • Add a tablespoon of oil to a skillet and heat over medium heat.
Add one or two corn tortillas at a time and brown on both sides until golden brown and crispy.
    Drain on paper towels.
Let sit for a few minutes for the tortillas to harden.
Note: You can also choose to buy pre-made tostada shells.

Assemble Tostadas

  • Place 3 or 4 jumbo shrimps on each tostada, add the shredded lettuce, extra cilantro, tomatillo pico de gallo,  jalapeño tartar sauce and sprinkle the top with some lime juice.
Serve immediately with extra lime wedges.
    Enjoy!
