- 1 lb boneless skinless chicken breasts rinsed and cut into one inch chunks
- 1 dill pickle juice
- 1½ milk divided
- 1 large egg
- 1¼ all purpose flour
- 1 tablespoon confectioners' sugar
- salt and pepper to taste
- 1 cup peanut or vegetable oil
Honey Mustard Dipping Sauce
- ¼ cup mayonnaise
- 2 tablespoon honey
- 1 tablespoon mustard
- 2 teaspoon Dijon mustard
- 2 teaspoon lemon juice freshly squeezed
Creamy Worcestershire Sauce
- ½ cup mayonnaise
- ¼ cup ketchup
- ½ teaspoon garlic powder
- ¼ teaspoon Worcestershire sauce
- 1 teaspoon black pepper
Marinate Chicken
In a large bowl, combine the pickle juice and ½ cup of milk. Add the chicken pieces.
Allow chicken to marinate for at least 30 minutes! NOTE: DO NOT SKIP THIS STEP as it guarantees you will cook the most tender chicken nuggets you've ever had! Drain chicken pieces and set aside.
Frying Nuggets
In a large skillet heat oil over medium high heat. (watch that the oil doesn't get too hot! Do NOT walk away from oil!!)After about 3 minutes, oil should be hot enough. Note: Check oil by dusting in a few droplets of flour into skillet. If flour sizzles, oil is ready! Working in batches, cook your nuggets until golden brown on one side.Flip over and cook until golden brown. Drain nuggets on paper towels. Repeat until all nuggets are cooked and fried.Serve immediately with sauces.
