Ingredients

  • 1 lb boneless skinless chicken breasts rinsed and cut into one inch chunks
  • 1 dill pickle juice
  • milk divided
  • 1 large egg
  • all purpose flour
  • 1 tbsp confectioners' sugar
  • salt and pepper to taste
  • 1 cup peanut or vegetable oil

Honey Mustard Dipping Sauce

  • ¼ cup mayonnaise
  • 2 tbsp honey
  • 1 tbsp mustard
  • 2 tsp Dijon mustard
  • 2 tsp lemon juice freshly squeezed

Creamy Worcestershire Sauce

  • ½ cup mayonnaise
  • ¼ cup ketchup
  • ½ tsp garlic powder
  • ¼ tsp Worcestershire sauce
  • 1 tsp black pepper

Instructions

Marinate Chicken

  • In a large bowl, combine the pickle juice and 1/2 cup of milk. Add the chicken pieces.
  • Allow chicken to marinate for at least 30 minutes!
NOTE: DO NOT SKIP THIS STEP as it guarantees you will cook the most tender chicken nuggets you've ever had!
  • Drain chicken pieces and set aside.

Coat Chicken

  • In a medium bowl, whisk the egg and add the remaining 1 cup of milk.
  • Toss chicken into the mixture and stir.
    Drain excess milk.
  • Add the flour, confectioners' sugar, salt and pepper to a large bowl or ziploc bag.
    Toss chicken to coat.
Shake off excess flour and set chicken on a plate.

Frying Nuggets

  • In a large skillet heat oil over medium high heat. (watch that the oil doesn't get too hot! Do NOT walk away from oil!!)
After about 3 minutes, oil should be hot enough.
Note: Check oil by dusting in a few droplets of flour into skillet. If flour sizzles, oil is ready!
  • Working in batches, cook your nuggets until golden brown on one side.
Flip over and cook until golden brown.
    Drain nuggets on paper towels.
  • Repeat until all nuggets are cooked and fried.
    Serve immediately with sauces.
