Arroz Chino (Chinese Fried Rice)

- 3 cups precooked white rice chilled
- 1 chicken breast cut into ½ inch cubes
- 4 garlic cloves minced
- 3 eggs whisked
- 5 ounces mixed frozen veggies
- 4 tablespoon butter
- 3-4 scallions chopped
- ½ white onion chopped
- 3-4 tablespoon low sodium soy sauce
- 1½ teaspoons oyster sauce
- ½-1 teaspoons toasted sesame oil
- salt and pepper to taste
Cook Chicken
In a skillet over medium high heat, add 1 tablespoon of butter. Allow butter to melt and then add chicken.Season with salt and pepper. Cook for 2 minutes and stir. Continue cooking for another 3 minutes or until chicken is cooked through. Remove chicken from the skillet and set aside. Lower heat to medium.
Eggs
Add another tablespoon of butter and allow to melt.Add eggs and scramble. Using a spatula, break eggs into small pieces. Remove from skillet and set aside.Keep heat on.
Stir Fry Rice
Return chicken to skillet and stir all ingredients together.
Return eggs and add precooked chilled rice.
Add the soy sauce, oyster sauce and sesame oil. Mix all ingredients well. . Add the chopped scallions and stir.
Taste rice for seasoning. Add additional soy sauce or a little more sesame oil if needed and stir.Serve immediately.

*You can find sesame oil, oyster sauce and soy sauce in the Asian section of your local supermarket, online or local Asian market.
