Tortilla de Plátano (Plantain Omelette)

Ingredients

  • 4 eggs whisked
  • ¼ cup milk
  • 1-2 tablespoon butter
  • ½ red pepper rinsed, seeds removed and chopped
  • ½ yellow or green pepper rinsed, seeds removed and chopped
  • 1 garlic minced
  • ½ white onion chopped
  • 1 ripe yellow plantain (with black spots) peeled and cut into ¼ inch slices
  • shredded cheese of choice for topping optional
  • salt and pepper to taste
  • ½ cup vegetable oil for frying plantain

Optional

  • can add bacon, sausage or ham to omelette

Instructions

Cooking Plantain

  • Cut both ends of plantain and score lengthwise using a knife, making sure not to cut into plantain flesh.
  • Peel and slice plantain and cut into ¼ inch thick slices.
  • In a skillet over medium heat, add about ½ cup of vegetable oil.
  • Add the plantain slices to skillet and cook on both sides until golden brown.
  • Remove plantain slices from skillet and drain on paper towels.

Cooking Omelette

  • Rinse peppers, remove seeds and cut into slices or cubes.
  • Peel and cut onion into cubes. Peel and mince garlic.
  • In another skillet, add two tablespoons of butter over medium heat until melted.
  • Add peppers and onions, stir and cook until onions are translucent.
  • Add plantain slices to skillet and lower heat to medium low.
  • Add minced garlic, stir ingredients. Cook garlic for 1 minute.
    Be careful not to burn it.
  • In a bowl, whisk eggs, add milk, salt and pepper to taste.
    Add eggs to skillet.
  • Cook omelette for a few minutes and then cover with a lid or aluminum foil.
  • Once omelette has cooked and set, top with cheese.
    Allow cheese to melt then serve immediately.
