Fried Plantains Recipe

This Fried Plantains Recipe is a great little appetizer with deliciously melted pepper jack cheese and topped with a heavenly mojo sauce.

Ingredients

  • 2 green plantains peeled and each cut into 6 equal one- inch pieces
  • 8 slices pepper jack cheese
  • salt to sprinkle over plantains after cooked
  • vegetable oil

MOJO SAUCE

  • cup fresh cilantro finely chopped
  • ¼ cup parsley finely chopped
  • 1-2 garlic cloves very finely chopped
  • 1 jalapeño or serrano finely chopped, can leave seeds and membrane for extra heat or remove
  • 4 tablespoon olive oil
  • 2 tablespoon red wine vinegar
  • salt and pepper to taste

Instructions

Mojo Sauce

  • Chop cilantro, parsley, garlic and jalapeño. 
    Put all ingredients into a bowl and mix well with olive oil and red wine vinegar. 
    Add salt and pepper to taste. Set aside.

Precooking Plantains

  • Peel the plantains using a knife down the middle being careful not to cut through vegetable. Using your fingers pry away peel.
  • Cut each plantain into 6 one-inch pieces.
  • Add 1 inch vegetable oil to a skillet over medium heat. Heat oil for 2 minutes. Add plantain pieces and cook until slightly brown on both sides (plantains will not be fully cooked)  Drain on paper towels.

Forming Plantains

  • Flatten pieces with a tostonera or simply with the bottom of a greased bowl.
  • Return to skillet and fry until golden brown. Drain plantains on paper towels again and sprinkle each with salt.

Forming Plantain Appetizer

  • Take one plantain piece and top with one slice of cheese (fold cheese if necessary) add another plantain, top with cheese again and add a third piece of plantain.
  • Heat through on both sides on non stick pan or place in microwave for a few seconds until cheese melts.
  • Repeat process with the other plantain pieces. Top each set of plantains with sauce. Serve immediately. Enjoy!

Notes

Use one garlic clove if you don't want the mojo sauce too garlicky or if cloves are big.
 Makes 4 sets of plantain. Serves 2-4
