Camarones a la Crema (Shrimps in a Chipotle Cream Sauce) is a delicious shrimp dish made in a creamy chipotle cream sauce that is cooked in twenty minutes or less, making it the perfect weeknight meal. Serve with rice or veggies for a full savory meal or even as an appetizer.
1poundraw large or extra large shrimpsde-shelled and deveined
1-2chipotle peppers in adobo sauce (depending on how much heat you prefer)
1cupmilk
1cupsour cream
2tablespoonbutter
4garlic clovesminced
1roma tomatochopped
½onionchopped
½red or yellow pepper or a combination of both
chopped
salt and pepper to taste
Instructions
Add the milk, sour cream and chipotle peppers to a blender and blend until smooth and well combined.
Add butter to a skillet over medium heat. Add the chopped onions and peppers to the skillet. Stir and cook until onions are somewhat translucent.
Add the tomatoes and garlic. Stir and cook for 1 minute.
Add the sauce to the pan and mix together well with the veggies. Add salt to taste. Cook on medium low for 2-3 minutes.
Add the shrimps and stir. Cook the shrimps for 5 minutes stirring in between. DO NOT over cook the shrimp or they will turn hard and rubbery.
With a spoon taste sauce for salt and adjust if needed.
Notes
NOTE: If you do not like spicy foods, just add half a chipotle pepper which will still give the sauce the smoky flavor of the chipotle pepper. However, note your sauce will look lighter in color.
