These chipotle peppers are actually red jalapenos that have been dried and smoked and then marinated in a red earthy smoky sauce.
They are extremely versatile and quickly gives a dish a delicious smoky and spicy flavor.
You can adjust the heat and spiciness to a dish that calls for chipotle peppers in adobo sauce by simply adding more or less peppers to the recipe.

Ingredients for Camarones a la Crema
- 1 pound large or extra large raw shrimp
- 1-2 chipotle peppers in adobo sauce (depending on how much heat you prefer)
- 1 cup of milk
- 1 cup sour cream
- 2 tablespoons of butter
- 4 garlic cloves minced
- 1 roma tomato diced
- ½ onion diced
- ½ red or yellow pepper or both diced
- salt and pepper to taste
NOTE: If you do not like spicy foods, just add half a chipotle pepper which will still give the sauce the smoky flavor of the chipotle pepper. However, note your sauce will look lighter in color.
How to Cook Camarones a la Crema
- Add the milk, sour cream and chipotle peppers to a blender and blend until smooth and well combined.
- De-shell and devein the shrimp. You can choose to keep or remove the tail, whichever you prefer.
- Season the shrimp with salt and pepper, place in a bowl and refrigerate until ready to use.
- Cut the peppers, onion, tomato and garlic cloves. Set aside.
- Add butter to a skillet over medium heat.
- Add the chopped onions and peppers to the skillet. Stir and cook until onions are somewhat translucent.
- Add the tomatoes and garlic. Stir and cook for 1 minute.
- Add the sauce to the pan and mix together well with the veggies. Add salt to taste.
- Cook on medium low for 2-3 minutes.
- Add the shrimps and stir. Cook the shrimps for 5 minutes stirring in between. DO NOT over cook the shrimp or they will turn hard and rubbery.
- With a spoon taste sauce for salt and adjust if needed.
Camarones a la Crema are done!

I had this dish and cannot remember where so I decided to look for a recipe. I substituted goat cheese aka feta and it was just a bit healthier and ever so delicious.

I am never disappointed by your recipes!! I made this with 1/2 a pound less shrimp and I put 3 chipotle peppers in mine (I like it spicy!). I blended the two with the milk and sour cream and thin sliced the remaining one. I would definitely recommend adding a squeeze of lime to the finished product and a little fresh cilantro for garnish! This was delicious!! Thank you for always creating great flavors in such a short cooking time!
