    Crispy Garlic Topping Baked Lobster (with Shrimp)

    This Crispy Garlic Topping Baked Lobster (with Shrimp) is stuffed with pieces of seasoned succulent tender shrimp and then topped with fresh homemade buttery garlic breadcrumbs that forms a crispy delicious topping and keeps the filling perfectly moist.

    If you have never had a baked whole lobster with a crispy garlic topping and a moist delicious filling, then you’re in for a treat!

    This Crispy Garlic Topping Baked Lobster (with Shrimp) or in Spanish known as, Langosta Rellena de Camarones is AMAZINGLY DELICIOUS!  Hands down a favorite in this household!

    If you’re a seafood or lobster lover like I am, than surely you have had lobster many different ways and baked is not only a common way to have lobster for you, but a favorite!

    However, it’s not everyday that

    I hear someone say to me, I love baked lobster with a crispy garlic topping!

    Why?

    Maybe because this secret has not been spread worldwide or maybe because I want to feel like it’s a personal creation of mine!  🙂

    When you go out to a restaurant and see baked lobster on the menu, that’s it, it’s a baked lobster!

    Maybe it’s a baked lobster seasoned with a few herbs and maybe stuffed with shrimp, scallops, crab meat or a combination of all three.

    But a baked lobster, it is!

    However, a Crispy Garlic Topping Baked Lobster with a delicious creamy center is not only exceptional but unique and unto itself!

    Lets not compare this recipe to the traditional baked lobster, this one has earned its title!

    This is a succulent lobster dish stuffed with plump garlicky pieces of shrimp, lobster chunks and then topped with garlic butter breadcrumbs that creates a crispy cover for the stuffing and keeps it moist.

    Also, if you know a little bit about me, then you know I’m an avid diver and scuba instructor…..I’ve had my share of catching a lobster or two in my time and I can vouch there is nothing better than a fresh catch of lobster.

    Unfortunately, where I currently live doesn’t necessarily allow me that fresh catch or offer me fish markets around the corner, so for this recipe, frozen lobster it is!!

    So if you’re in the same situation as me, no worries, your crispy garlic topping baked lobster (with shrimp) will taste amazing, just like mine!

    But, if you’re fortunate enough to get fresh or at the very least raw lobster, I’m jealous to say, but yours will taste better than mine!

    Fresh live lobster is definitely better!

    Okay so what will you need for this delicious concoction?

    Just a few ingredients…here we go!

    Ingredients for Crispy Garlic Topping Baked Lobster (with Shrimp)

    • 1 whole lobster
    • 1 lemon

    Seafood Stuffing

    • 6 large shrimps (peeled, deveined, cut into small pieces)
    • lobster meat from tail (removed and cut up into chunks)
    • ½ stick of butter
    • 7 crackers (blended)
    • ½ garlic (minced)
    • 1 tablespoon white wine (optional)
    • salt to taste

    Crispy Garlic Topping

    • 2-3 slices of bread
    • ½ a garlic clove
    • 3 tablespoon butter (melted)

    How to Make Crispy Garlic Topping Baked Lobster (with Shrimp)

    If using a frozen lobster

    • Fill a large pot with enough water to cover lobster.
    • Heat water over high heat.
    • Even though the lobster is already cooked, add lobster to the pot and heat through for 7 – 10 minutes.
    • Remove lobster from pot and allow to cool for a few minutes.
    • Once lobster has cooled some, flip lobster over and cut in half lengthwise.

    Note:  If you do not like to eat the tomalley (green part), you can remove it at this point and discard if you like.

    • Remove meat from tail with fingers and chop into chunks.  Set aside.
    • Chop each shrimp into 3 pieces.  Set aside.

    Breadcrumbs and Crackers

    • Breakup bread slices into pieces and put in a blender with the garlic clove.  Blend to make fresh breadcrumbs.  Set aside.
    • Blend the crackers.  Set aside.

    Note:  Make fresh breadcrumbs, do not use store bought breadcrumbs since these are usually stale and seasoned and will alter the taste.

    Shrimp and Lobster Stuffing

    • In a pan or cast iron skillet over medium heat, add the butter and minced garlic.  Allow butter to melt and cook garlic for 1-2 minutes while stirring.  DO NOT allow butter and garlic to burn.
    • Add the chopped shrimp and cook for a minute.
    • Add lobster chunks to pan with blended crackers and wine.  Stir well and cook for another minute.
    • Add a sprinkle of salt to taste.  Turn off stove.
    • Remove cooked shrimp and lobster and place in a bowl.

    Stuffing the Lobster and Topping with Breadcrumbs

    • Melt butter in microwave for a few seconds.  Add butter to the breadcrumbs and stir well together.
    • Evenly divide shrimp and lobster stuffing into both lobster halves filling the body and tail cavity.
    • Top both lobster halves with the garlic butter breadcrumbs.
    • Place lobster halves on a baking sheet and bake for 15 minutes in a 350 degree oven or broil for 10 minutes.

    Serve the Crispy Garlic Topping Baked Lobster (with Shrimp) with a side of melted butter and lemon wedges.

    Ingredients

    Instructions
