Sopa de Fideo (Mexican Noodle Soup)

Sopa de Fideo or Mexican Noodle Soup is a delicious soup made with simple ingredients.  With just a few ingredients you will have a hyper yummy soup in no time.  Total comfort soup at it’s best!

Sopa de Fideo (Mexican Noodle Soup) is one of those soups that I refer to as “soups that comforts the soul.”

Not only is it total comfort food but just as important is the fact that it is hyper delicious and tasty.  It is also a super easy soup to make.

This soup is perfect for the whole family, even your fussy eaters will love this soup.  And want another bonus?  Sopa de fideo is made in no time!

It is definitely one of those soups that makes you wonder, how could a soup that is this easy to make be this delicious?!

Puerto Rican Rice and Beans

Puerto Rican Rice and Beans or “Arroz y Habichuelas” is a traditional rice dish made with medium or long grain rice, red beans and seasoned with Puerto Rican seasonings.  Excellent side dish to practically any meal!

If you have never had a plate of Puerto Rican Rice and Beans you may quite certainly be missing out on another delicious rice dish in your life.

In spanish this delicious rice dish is known as “Arroz y Habichuelas” or “Arroz con Habichuelas” and is a dish made several times a week in many Puerto Rican homes, including my own.

We have almost an obsession with rice because it is served with practically every meal we have.  It really doesn’t matter whether you’re serving chicken, pork, steak or seafood, rice finds it’s place on the table.  We just love our rice! 😋…

Sorullitos

Sorullitos or Sorullitos de Maiz are Puerto Rican cornmeal fritters or corn sticks.  With a crispy outside and a soft and buttery inside, they make for a delicious snack, appetizer or side dish.  (Gluten free)

Entomatadas (Cheese Stuffed Tortillas)

This delicious Entomatadas recipe is easy, quick and delicious.  Cheese stuffed Tortillas stuffed with queso fresco, onions and smothered in a quick savory tomato sauce, topped with sliced onions, cheese, shredded red cabbage and scallions.
