    What is Limber?

    Limber, is a Puerto Rican frozen treat that can be enjoyed as a quick refreshing snack or dessert.

    It’s easy to make, meaning within less than 10 minutes you would have made a batch that’s ready to freeze.

    Enjoyed by both children and adults alike and made in many different flavors.

    Some Popular Flavors Include:

    Ingredients

    Ingredients needed to make this recipe.
    • Cream of Coconut (Crema de Coco) – creamy and delicious!
    • Coconut Milk (Leche de Coco) – adds additional coconut flavor.
    • Coconut Milk (Agua de Coco) – adds even more coconut flavor while also thinning the base some.
    • Milk – you can use regular or 2%.
    • Cinnamon – adds yummy flavor but optional to use if you’re not a fan of cinnamon.
    • Vanilla Extract – can use pure or imitation.
    • Coconut Flakes – adds extra textured flavor and presentation but is optional.
    • Sugar – although I did not add any sugar to this recipe as I find it sweet enough, you can add for even sweeter flavor.

    Instructions

    Recipe steps 1-4.

    Step 1: Add the cream of coconut, coconut milk, coconut water, milk and vanilla extract to a blender and blend for a few seconds until smooth. Note: You can also add all the ingredients to a mixing bowl.

    Step 2: Add the ground cinnamon and blend again for a few seconds.

    Step 3: After blending again, you will notice a foamy film on the top, skim this foam off, using a skimmer or large spoon and discard.

    Step 4: Add the water and blend for a second or stir limber with a large spoon.

    Recipe steps 5-8.

    Step 5: Pour the limber into plastic cups. (I used both cups and mini plastic shot glasses).

    Step 6: Top each cup with a sprinkle of coconut flakes.

    Step 7: Top each cup with a sprinkle of ground cinnamon.

    Step 8: For easier freezing, add all the cups to a casserole and freeze for 6 hours or until fully frozen. Enjoy!

    How to Eat and Enjoy a Limber

    There are two ways to enjoy a limber.

    First Way:

    Take the limber out of the freezer, cradle the cup between your hands and gently roll it to gradually warm the exterior, which will help loosen the edges. Next, apply upward pressure from the base to effortlessly release the limber. Now, savor your treat!

    Second Way:

    Follow the same steps as above then use your fingertips to flip it over, just as shown in the picture below. Delight in your treat!

    Recipe FAQs

    How to Store Batches of Limber?

    If you would like to always have a batch of limbers ready at all times, it’s best to buy cups with lids. This prevents other “freezer smells” not to infuse into the limbers.

    What if I Don’t Really Enjoy Coconut?

    No problem, limbers come in many flavors. Some of our other favorites are, Limber de Leche and Limber de Oreo.

    I’d Like this Recipe to be Sweeter?

    To achieve a sweeter limber, just incorporate a few tablespoons of granulated sugar into the limber mixture until it reaches your preferred level of sweetness, then blend.

    What is the Best Size Plastic Cups to Use?

    5oz, 7oz and 9oz sizes are the best.

    What if I Don’t Have Plastic Cups?

    You can also use plastic tumblers, plastic dessert cups, silicone muffin cups, mini plastic shot glasses, plastic jello shot glasses or ice cube trays.

    I Don’t Like the Texture of the Shredded Coconut on Top!

    No problem, do not add it!

    Equipment

    • plastic cups 5, 7, or 9 ounce cups

    Ingredients

    • 1 15oz cream of coconut (crema de coco)
    • 1 17.5oz coconut water (agua de coco)
    • 1 13.5 oz coconut milk (leche de coco)
    • 1 cup whole or 2%
    • 1 cup water
    • 1 teaspoon vanilla extract
    • ½ teaspoon ground cinnamon (optional)
    • coconut flakes sprinkled (optional)
    • sugar not needed but can add a few tablespoons to taste if you desire a sweeter limber

    Instructions

    Notes

    Recipe Notes:
    Love a sweeter limber? When preparing the limber mixture, feel free to enhance its sweetness to your preference by adding a few tablespoons of granulated sugar and blend for a few seconds.
    Briefly toast coconut flakes in a pan for added visual appeal, and then use them as a topping for your limbers before placing them in the freezer.
    If You Love Coconut:
    • You can also add a few tablespoons of coconut flakes to the limber mixture for more coconut flavor and texture.
    If You Do Not Like:
    • Ground cinnamon or coconut flakes, do not top the limbers with it. 
    Entertaining?
    For a fun party treat, consider pouring the limber mixture into small plastic shot glasses or plastic jello cups. This recipe will make about 35 Limber de Coco in mini-shot glasses.
