Instructions
Preheat oven to 350 degrees (170 C). Add butter to a skillet on medium heat. Add onion and bell pepper and cook until onion is translucent. About 5 minutes.
Add corn, black beans (rinsed and drained in a colander) and mix well with onion and bell pepper. Cook for a few minutes. Add the jalapeño and cayenne pepper. Mix well. Add garlic, salt and pepper, mix and cook for another 2 minutes. Set aside.
In a bowl combine sour cream, mayonnaise, half of the cheddar cheese and monterey cheese. Mix. Add sauteed vegetables to mixture. Place all in a casserole, skillet or pie dish. Top with remaining cheddar cheese. Place in oven and cook for 12 -15 minutes or until just lightly brown.
Once done, top with scallions and serve with tortilla chips. Enjoy!
