- 2 5oz cod fillets rinsed under cool water
- 4 tablespoon butter
- 3 tablespoon breadcrumbs
- 1 tablespoon Parmesan cheese grated
- 1 tablespoon garlic puree or minced
- 1 teaspoon fresh parsley chopped
- salt to taste
- pepper to taste
- 2 lemons one lemon sliced and the other squeezed over fillets
- 1 tablespoon vegetable oil
- lemon wedges for serving
Preheat the oven to 400°F. Add a few lemon wedges to the bottom of a casserole dish.
Season the cod fillets on both sides with salt and pepper. Lay on top of the lemon wedges.
Mix the breadcrumbs, oil, parmesan cheese, garlic and parsley in a small bowl. Top the fillets with the breadcrumb mixture. Squeeze fresh lemon juice over fillets and top with butter. Add extra butter around the fillets.
Bake the fillets for 10-13 minutes or until the fish is opaque and flakes easily with a fork. To serve, make sure to spoon some of the juices from the pan over the fillets. Serve with lemon wedges. Enjoy!

Cod Fillets - Bothe fresh and frozen fillets can be used for this recipe.
Breadcrumbs - To make fresh breadcrumbs for this recipe, simply break apart a few slices of bread and add to a blender or food chopper and blend for a few seconds until crumbs are formed.
Cooking: Do not overcook the fish or it will turn out tough.
