    • Cod – If you do not have a fishmonger near by or one that has fresh Alaskan Cod, check the frozen seafood section in your local supermarket.
    • Breadcrumbs – I prefer to use fresh breadcrumbs versus store bought.
    • Butter and Lemon – A must in my book for all fish dishes!

    Substitutions and Variations

    • Cod – Atlantic or Pacific Cod work well as well.
    • Breadcrumbs – Although homemade breadcrumbs taste so much better and are really easy to make, you can use plain store bought as well. Can also use panko breadcrumbs.
    • Lemon – You can also use bottled lemon juice for this recipe.

    Instructions

    Step 1: Preheat the oven to 400°F. Add a few lemon wedges to the bottom of a casserole dish.

    Step 2: Season the cod fillets on both sides with salt and pepper. Lay on top of the lemon wedges.

    Step 3: Mix the breadcrumbs, oil, parmesan cheese, garlic and parsley in a small bowl. Top the fillets with the breadcrumb mixture. Squeeze fresh lemon juice over fillets and top with butter. Add extra butter around the fillets.

    Step 4: Bake the fillets for 10-13 minutes or until the fish is opaque and flakes easily with a fork. To serve, make sure to spoon some of the juices from the pan over fillets. Enjoy!

    Ingredients

    • 2 5oz cod fillets rinsed under cool water
    • 4 tablespoon butter
    • 3 tablespoon breadcrumbs
    • 1 tablespoon Parmesan cheese grated
    • 1 tablespoon garlic puree or minced
    • 1 teaspoon fresh parsley chopped
    • salt to taste
    • pepper to taste
    • 2 lemons one lemon sliced and the other squeezed over fillets
    • 1 tablespoon vegetable oil
    • lemon wedges for serving

    Instructions
