    This Ensalada de Garbanzos (Garbanzo Bean Salad) is a quick, easy, and delicious side dish tossed in a tangy Garlic Lime Vinaigrette.

    There’s no easier side dish to put together than a dish made using pantry canned goods!

    Stock up on a few pantry goods, and always be able to easily and quickly put together a quick side dish like this one.

    Just like my ensalada de granos (bean salad), ensalada de pasta fría (cold pasta salad), ensalada de frijoles (black bean salad), and our ensalada de arroz primavera (primavera rice salad) this dish is incredibly easy to put together and ready in less than 10 minutes. Love that!

    What are Garbanzos?

    Garbanzos are a legume that you probably know better as chickpeas.

    They’re high in vitamins, mineral, fiber and are a great source of protein.

    With a delicious nutty flavor, they’re excellent in stews, salads and so many other fabulous dishes.

    For today’s recipe, we’re going with a quick, and tasty salad.

    Quick Garbanzo Bean Salad

    This delicious salad comes together with just a can of garbanzos, a can of corn, peppers, red onion, tomatoes, and a yummy tangy vinaigrette.

    It’s excellent to put together on busy worknights when you’re tired and the last thing you feel like doing is preparing a meal that takes two hours!

    Simply pair it with seared chicken breasts, steaks or fried pork chops for a super easy weeknight meal.

    It’s also perfect when having a large group or gathering. Cuts down on kitchen time and a few cans go a long way! #makeyourlifeeasy!

    Ingredients

    Ingredients for the Garbanzo Bean Salad.
    • garbanzos (chickpeas)
    • corn
    • pepper
    • red onion
    • grape tomatoes

    Garlic Lime Vinaigrette

    • lime
    • garlic paste
    • cilantro
    • olive oil
    • apple cider vinegar
    • salt and pepper

    Making the Ensalada de Garbanzos

    • Make the garlic lime vinaigrette by adding all the ingredients to a mixing bowl and whisk or use a fork.

    • Rinse the cans under warm water to remove any dirt or factory debris from the lids.
    • Open the cans and drain the liquids.
    • Rinse the garbanzo beans under cool water and add to a mixing bowl.
    • Add the corn to the mixing bowl.
    • Rinse the veggies and cilantro.
    • Cut the veggies and chop the cilantro.
    • Add everything to the mixing bowl.
    • Whisk the vinaigrette one more time, top on the salad and toss everything together.
    • You can serve immediately or allow to chill in the refrigerator for 20 minutes.

    What other Beans, Legumes Would Be Good in this Salad?

    Whatever you like! Here are some other ideas:

    • black beans
    • green beans
    • pinto beans
    • kidney beans
    • cannellini beans
    • wax beans

    Other Veggie and Cheese Ideas

    • cucumber slices or chunks
    • broccoli florets
    • feta cheese
    • avocado chunks
    • parsley

    Storing Any Leftovers

    Store the left overs in a plastic container and refrigerate for up to 4 days.

    Stir before serving again.

    Ingredients

    • 1 can garbanzo beans (chickpeas) drained
    • 1 can corn drained
    • 1 bell pepper green, yellow, or red, rinsed & chopped
    • ½ red onion chopped or thinly sliced
    • 1 cup grape tomatoes rinsed & sliced in half

    Garlic Lime Vinaigrette

    • handful fresh cilantro rinsed and chopped
    • 1 lime squeezed
    • 2 garlic cloves or 2 teaspoon garlic paste minced
    • ½ cup olive oil
    • ¼ cup apple cider vinegar
    • salt and pepper to taste

    Instructions

    • Add all the ingredients to a mixing bowl and whisk or use a fork.

    Salad

    • Rinse the cans under warm water to remove any dirt or factory debris from the lids.
      Open the cans and drain the liquids.
    • Rinse the garbanzo beans under cool water and add to a mixing bowl.
      Add the corn to the mixing bowl.
    • Add all the veggies and cilantro to the mixing bowl.
    • Whisk the vinaigrette one more time, top on the salad and toss everything together.
