If you're anything like me, there's nothing better than fall-apart, saucy pork ribs. Forget the grill for a second, we're talking Instant Pot magic here. These ribs come out tender, juicy, and coated in an easy delicious spice blend that sticks to every bite. And, if you love ribs, you might also want to check out some of my other favorites like my Puerto Rican costillas fritas, costillas de puerco, and my costillas en barbecue for some extra rib inspiration.

How to Make Instant Pot Boneless Pork Ribs

The seasoned boneless pork ribs sitting inside the Instant Pot rack insert.

    Step 1: Prep the Ribs
Rinse your ribs under cool water. If you like, cut them in half or keep them whole.

Step 2: Make the Rib Coating
In a mixing bowl, combine all the spices, mustard, and hot sauce. Mix with a fork until it forms a smooth paste.

    Step 3: Coat the Ribs
Rub the mixture all over the ribs, making sure every piece is well coated.

Step 4: Prepare the Instant Pot
Pour the chicken broth into the bottom of the Instant Pot. (If you're using chicken bouillon: dissolve one bouillon cube in 1 cup water by microwaving for 1 minute, then stir well.)

    Step 5: Arrange the Ribs
Place the Instant Pot metal rack inside the pot. Lay the seasoned ribs on top of the rack in a single layer. Close the lid and lock it in place. Turn the pressure valve to sealing.

    Step 6: Cook
Set the Instant Pot to cook on high pressure for 45 minutes.

    Step 7: Release the Pressure
When cooking is done, let the pressure release naturally for 10 minutes, then carefully finish with a quick release.

    Step 8: Add Barbecue Sauce
Remove the ribs and place them in a bowl. Add as much or as little of your favorite barbecue sauce and a splash of broth from the Instant Pot. Mix gently with a large spoon to coat.

    Step 9: Serve and Enjoy
Serve ribs with your favorite sides.

    Stove Top Instructions

    Step 1: Prep the Ribs
Rinse the ribs under cool water and follow the instructions above to prepare the marinade.

    Step 2: Season the Ribs
Rub the marinade all over the ribs, making sure they are evenly coated.

    Step 3: Sear the Ribs
In a medium to large pot, heat 2 tablespoons of oil over medium-high heat. Once the oil is hot, add the ribs and sear them on all sides until lightly browned.

    Step 4: Add the Broth
Carefully pour in the chicken broth. Cover the pot and cook over medium heat for 1 hour.

    Step 5: Continue Cooking
After 1 hour, check on the ribs and gently stir them with a fork. Cover again and continue cooking for another 45 minutes, or until the ribs are very tender.

    Step 6: Add Barbecue Sauce
Remove the ribs from the pot and place them in a mixing bowl. Add as much or as little of your favorite barbecue sauce as you like, along with a little of the broth the ribs cooked in. Mix well to coat.

    Step 7: Serve
Serve immediately with your favorite side dish.

What to Serve with Boneless Ribs

These ribs are saucy, tender, and full of flavor, so you'll want some delicious sides to go with them. Here are some tasty ideas:

    • Arroz chino (Puerto Rican Fried Rice)
    • Ensalada de papa (Puerto Rican potato salad)
    • Ensalada de coditos (macaroni salad)
    • Ensalada de coditos con jamon (macaroni salad with ham)
    • Ensalada de frijoles (black bean salad)
    • Macarrones con queso (elbow mac and cheese)
    • Ensalada de pasta fria (cold pasta salad)

    Cathy’s Expert Tips

    • Coat the ribs well. Take a minute to really rub the seasoning mixture all over the ribs so every piece is fully covered. That's where all the flavor comes from.
    • Buying boneless ribs. Buy ribs that have fat marbling throughout the meat as these will produce the best fall apart rib recipe. Avoid ribs that are very light pink and completely lean, with little to no fat. These cuts will dry in the cooking process.
    • Don't skip the rack in the Instant Pot. The rack keeps the ribs elevated so they cook evenly while the broth below creates steam and pressure.
    • Add barbecue sauce at the end. Mixing the sauce in after cooking keeps the full barbecue flavor and prevents it from thinning out during pressure cooking.
    • Use some of the cooking broth. A splash of the broth adds extra flavor and helps the barbecue sauce coat the ribs nicely.
    • Want thicker sauce? After removing the ribs, simmer a little of the cooking broth on the stovetop for a few minutes until slightly reduced, then mix it with the barbecue sauce.

    Recipe FAQ’s

How long to cook boneless ribs in Instant Pot?

The sweet spot for cooking boneless pork ribs will depend on how many pounds of pork are you cooking in the Instant Pot and whether you have cut the pork ribs in half or into large chunks versus leaving them whole. For example, for this recipe, three pounds of boneless ribs cook perfectly tender set at 45 minutes.

Can I make these ribs ahead of time?

Yes. You can cook the ribs in advance and store them in the refrigerator. When ready to serve, reheat them and toss with barbecue sauce.

How do I store leftover ribs?

Place leftovers in an airtight container and store in the refrigerator for up to 3-4 days.

How do I reheat the ribs?

Reheat them in a skillet over medium heat with a splash of broth or barbecue sauce to keep them moist.

    Can I freeze these ribs?

Yes. Let the ribs cool completely, then store them in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
