How to Make Costillas en Barbecue
Begin with making a quick and simple garlic paste.
Add 5 peeled garlic cloves to a chopper or blender with a ¼ cup of oil and blend until smooth and paste forms.
Now proceed with getting the ribs ready to season and bake.
- Rinse the ribs and set on a cutting board or baking tray.
- At one end of the rack, using a small knife, slide the knife under the membrane and over the bone.
- Pull the membrane off and discard.
- Using the tip of the knife, pierce the skin of the ribs on both sides. (By taking the time to remove the membrane and pierce the skin, it will allow the seasoning we will be adding to seep through and season the ribs quickly.)
- Add a few spoons of the garlic paste on top of the ribs and spread all over.
- Season the other side as well.
- Sprinkle adobo on both sides.
- Sprinkle paprika and oregano on both sides.
- Place ribs on a baking dish and surround ribs with ½ of the beer.
- Cover baking tray with aluminum foil and bake at 350 degrees for 1½ hours or until internal temperature is 195 degrees for maximum tenderness.
- Take ribs out, uncover and glazed with your favorite barbecue sauce on both sides.
- Place ribs back in the oven for 5-10 minutes, uncovered.
- Remove ribs from the oven. A fork should easily pierce right through meat.
- Cut ribs and serve.
Optional: Top or serve with additional barbecue sauce if you like.
