Limber de Coco

Taste a little bit of island paradise with this refreshing icy treat, Limber de Coco! Infused with coconut, this frozen delight is guaranteed to whisk your senses to paradise!

Equipment

  • plastic cups 5, 7, or 9 ounce cups

Ingredients

  • 1 15oz cream of coconut (crema de coco)
  • 1 17.5oz coconut water (agua de coco)
  • 1 13.5 oz coconut milk (leche de coco)
  • 1 cup whole or 2%
  • 1 cup water
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon (optional)
  • coconut flakes sprinkled (optional)
  • sugar not needed but can add a few tablespoons to taste if you desire a sweeter limber

Instructions

  • Add the cream of coconut, coconut milk, coconut water, milk and vanilla extract to a blender and blend for a few seconds until smooth.
    Note: You can also add all the ingredients to a mixing bowl.
  • Add the ground cinnamon and blend again for a few seconds.
  • After blending again, you will notice a foamy film on the top, skim this foam off, using a skimmer or large spoon and discard.
  • Add the water and blend for a second or stir limber with a large spoon.
  • Pour the limber into plastic cups.
  • Top each cup with a sprinkle of coconut flakes.
  • Top each cup with a sprinkle of ground cinnamon.
  • For easier freezing, add all the cups to a casserole and freeze for 6 hours or until fully frozen. Enjoy!

Notes

Recipe Notes:
Love a sweeter limber? When preparing the limber mixture, feel free to enhance its sweetness to your preference by adding a few tablespoons of granulated sugar and blend for a few seconds.
Briefly toast coconut flakes in a pan for added visual appeal, and then use them as a topping for your limbers before placing them in the freezer.
If You Love Coconut:
  • You can also add a few tablespoons of coconut flakes to the limber mixture for more coconut flavor and texture.
If You Do Not Like:
  • Ground cinnamon or coconut flakes, do not top the limbers with it. 
Entertaining?
For a fun party treat, consider pouring the limber mixture into small plastic shot glasses or plastic jello cups. This recipe will make about 35 Limber de Coco in mini-shot glasses.
