    Steak and Potato Omelette

    Have leftover steak?  Make this delicious fluffy omelette filled with slices of rib eye steak, potatoes, three blend cheese and topped with chopped scallions.  This Steak and Potato Omelette (Tortilla de Carne) is so filling, it’s perfect for breakfast or dinner.

    If you’re anything like me than you do a lot of summer grilling, which means, you might have a few leftovers.  Whether its a few pieces of meat, potatoes or veggies.  That’s where this Steak and Potato Omelette comes in.

    Why not make a delicious omelette with those leftovers?

    My favorite meats to grill always includes some sort of beef and pork and I always grill a little extra for leftovers.

    Normally I like to make something yummy and quick with these leftovers for lunch, like, steak fajitas, tacos or sandwiches.

    But Saturday morning I woke up craving something slightly different.

    Yep!  This delicious fluffy omelette loaded with slices of tender steak, potatoes, cheese and then topped with even more cheese and scallions!  Yum!

    Ingredients for This Delicious Fluffy Steak Omelette

    • 4 eggs
    • 8 oz cooked rib eye steak
    • 2 potatoes cubed
    • 1 cup three cheese blend
    • 2 tablespoons milk
    • 4 tablespoons butter
    • scallions chopped
    • vegetable oil
    • salt and pepper

    How to Make a Fluffy Steak Omelette

    1. Thinly slice steak.  Set aside.
    2. In a skillet, over medium heat add 2 tablespoons of oil and add the potatoes.
    3. Add salt and pepper to the potatoes and stir.
    4. Cook for 10 minutes or until potatoes are fork tender.
    5. Remove potatoes from pan and set aside.

    1. In a bowl whisk eggs.
    2. Add milk to egg mixture and salt and pepper to taste.
    3. Heat a small skillet over medium low heat and add 2 tablespoons of butter.  Swirl butter around pan.
    4. Add half the egg mixture to pan.
    5. As the egg starts to cook on the bottom and edges, use a spatula to to lift eggs a little, tilt pan and allow the raw egg to roll under to the bottom of cooked egg.
    6. Repeat around the edges until most of the egg is cooked.
    7. With the spatula, gently flip the omelette.
    8. Lower heat.
    9. Add some cheese to one side of the omelette and half the slices of steak.
    10. Top with half the potatoes.

    1. Fold omelette over.
    2. Add more shredded cheese on top.  Allow cheese to melt.
    3. Top with chopped scallions.  Done.
    4. Repeat procedure and make the second omelette.

    Ingredients
