    These Sandwichitos de Mezcla (Puerto Rican Party Sandwiches) are easy, tasty and economical. Using just three ingredients, it makes the perfect appetizer, especially perfect for feeding a large group.

    If you are Puerto Rican or have ever been to a Puerto Rican party, then you are very familiar with these little party sandwiches.

    They’re one of the most popular appetizer foods you will find in Puerto Rico.

    They are always served at every gathering, at every party, and are even served at wakes.

    They’re incredibly easy and fast to make and can feed a lot of people with just one preparation.

    Serve these alongside other easy appetizers like alcapurrias (green banana fried fritters), bolitas de queso (cheeseballs) sorullitos (cornsticks), garlic tostones, yuca frita (fried yuca), arañitas de platano Verde, empanadillas de carne (Puerto Rican empanadas) for an economical delicious spread of Puerto Rican appetizers.

    What fond memories these little sandwiches stir up every time I make them!

    What are Sandwichitos de Mezcla?

    Sandwichitos means “mini sandwiches” and mezcla means “mix” or “mixture” hence “mixture mini sandwiches.”

    These “sandwichitos” are normally made with just three ingredients, luncheon meat, like Spam, pimiento peppers and cheese dip.

    Normally for the cheese dip, Cheez Whiz is normally used but if you cannot find Cheez Whiz in your local supermarket, use any other pimiento cheese dip or a cheese sauce.

    Some homes also like to add additional ingredients like garlic, cream cheese or milk.

    The garlic gives it an amazing flavor.

    The cream cheese makes the mixture thicker while also adding additional flavor.

    The milk helps to thin out the mixture if it is to thick or you can also use some of the brine the pimiento peppers are in.

    Ingredients

    • Cheese dip (Cheez Whiz)
    • Spam
    • Pimiento peppers
    • Sandwich bread

    Instructions

    The pimiento peppers, spam and cheese added to a food processor.

    Remove the Spam from the container and cut it into large chunks.

    Add the pimiento peppers, cheese and spam to a blender or food processor and blend until smooth.

    Add salt and pepper to taste and blend again.

    Cutting the crusts of bread and then  cutting them into quarters.

    Spread a layer of the mixture on the bread.

    Cut the crusts off (optional) and cut the sandwiches into quarters.

    Serve.

    Note: If you would like to thicken the mixture, add a few tablespoons of cream cheese and blend again.

    To thin the mixture, add some of the brine from the peppers.

    How to Store the Mezcla

    Store the mezcla in an airtight container for up to 5 days.

    If you have a lot of mezcla left over, simply store it in the freezer in an airtight container for up to 2 months.

    When you are ready to have it, thaw it in the refrigerator overnight and re-mix with a fork before spreading on sandwich bread.

    Can I Prep Ahead?

    You can prepare the spread ahead of time and then assemble the sandwiches the day you plan on serving them.

    If you spread the mixture on the bread, a few days in advance the bread will get soggy.

    Tips

    This recipe makes enough spread for at least 3 loaves of sandwich bread!

    You can choose to keep the crusts on the bread if you prefer.

    You can also serve this spread on crackers. Ritz crackers are excellent with this mezcla!

    If you plan on bringing these sandwichitos to a party or gathering, pack them in a plastic container with a paper towel on top of the sandwiches to keep the bread from drying out.

    These are perfect to bring to the beach. Bring the jar filled with the spread and assemble the sandwiches at the beach.

    Ingredients

    • 1 4 oz jar pimiento peppers reserve the brine
    • 1 can Spam
    • ¾ cup cheese dip Cheez Whiz is commonly used
    • salt and pepper to taste
    • sandwich bread

    Other Optional Ingredients

    • 1-2 teaspoon garlic paste gives the mix a nice flavor
    • 4 oz cream cheese can add for extra flavor or to thicken mixture

    Instructions

    • Remove the Spam from the container and cut into large chunks.
    • Add the pimiento peppers, cheese and spam to a blender or food processor and blend until smooth.
    • Add salt and pepper to taste and blend again.
    • Spread a layer of the mixture on the bread.
    • Cut the crusts off (optional) and cut the sandwiches into quarters.
      Serve.

    Notes

    Note: If you would like to thicken the mixture, add a few tablespoons of cream cheese and blend again.
