    Black Bean Caramelized Onion Bacon Dip

    A delicious cheesy creamy Black Bean Caramelized Onion Bacon Dip (Dip de Frijoles Negros).  Made with a layer of chipotle flavored refried beans, topped with caramelized onions, garlic, chopped bacon, sour cream, mayo, pepper jack cheese and jalapeño (optional) chopped scallions.  Serve with tortilla chips or toasty baguette.  Excellent!

    This dip is creamy and fabulously delicious!

    Perfect for an appetizer and entertaining.

    With a few ingredients you will have another fabulous dip to add to your repertoire of dips.

    Ingredients

    • Black beans
    • Caramelized onions
    • Chipotle peppers
    • Pepper jack cheese
    • Sour  Cream
    • Mayo
    • Bacon
    • Chopped scallions
    • And of course garlic

    Another delish dip to offer your friends and family or maybe just have it all for yourself if you wake up feeling a little selfish that day! 😄

    How to Make

    Start with making the black beans into a delicious concoction of refried beans (of course you can facilitate this step if you would like by just buying a can of already made refried beans).

    I added a few extras to spice these black beans up some…some chipotle peppers, garlic,chopped jalapeno pepper and fresh cilantro.

    Then it’s just a matter of mixing the caramelized onions, sour cream, mayonnaise, bacon and the pepper jack cheese.

    Then add the layer of refried beans to a oven proof skillet (or small casserole) and top the beans with the onion  bacon cheese mixture.  It’s now ready for the oven!

    After 15 minutes, you end up with this delicious cheesey creamy Black Bean Caramelized Onion Bacon Dip.

    What to Serve it with

    Serve with tortilla chips or toasty baguette.

    Ingredients

    For Refried Beans

    • 16 oz black beans drained and rinsed
    • 1 chipotle pepper in adobo sauce chopped
    • 2 tablespoon chopped fresh cilantro
    • 1-2 garlic cloves finely chopped
    • 1 jalapeno (optional) chopped
    • 1 tablespoon oil
    • 2 tablespoon water
    • salt to taste

    Caramelized Onion, Cheese, Bacon Mixture

    • 1 onion chopped
    • 1 tablespoon butter
    • ½ cup pepper jack cheese shredded
    • 3 slices cooked bacon chopped
    • ⅓ cup sour cream
    • ⅓ cup mayonnaise

    Serve

    • 2-3 stalks scallions chopped
    • tortilla chips or baguette toast slices

    Instructions

    Refried Black Beans

    • Add a tablespoon of oil to a skillet over medium heat.  Add beans and chopped chipotle pepper and jalapeno if using.  Stir and cook for 2 minutes.
    • Add garlic and cilantro.  Stir and cook for another minute
    • Add about 2 tablespoons of water and stir.  Cook for another to minutes.
    • With a potato masher start to mash black beans to form refried beans.  Once done add salt to taste and stir.  Set aside.

    Caramelized Onion, Cheese, Bacon Mixture

    • Preheat oven to 400 degrees F.
    • In a skillet over medium heat add chopped onions with one tablespoon of butter.  Cook for a few minutes or until onions are golden brown on the edges.
    • In a bowl add the caramelized onions, cooked bacon, sour cream, mayonnaisse and the pepper jack cheese.  Stir and combine ingredients well.
    • Add the refried beans to an oven proof skillet and spread beans.  Top with the caramelized onion cheese bacon mixture and spread across skillet creating an even layer.
    • Bake for 15-20 minutes until bubbly and golden brown.
    • Top with chopped scallions and serve immediately with tortilla chips or sliced toasty baguette.  Enjoy!
