    Want to change things up a little for breakfast? Make these yummy Bell Pepper Eggs in under 15 minutes. Not only delicious but oh so pretty and fun to make! Everyone will love these!

    Well I’ve got a heavenly inspiration for you!These Bell Pepper Eggs are not only yummy and healthy but also a fun way to cook and serve your eggs!

    Plus you can have these ready and on the table in under 15 minutes!   

    With a few simple steps you’ll soon realize that they’re not only a fun way to eat eggs but are also complete no fuss eggs!

    Gone are the days of your egg whites running into each other and fighting for space on your pan.

    Yes! Each egg has its own little edible “tray” it is cooked in.

    How Do You Want Your Eggs?

    Fantastically, you are not limited on how to make your eggs in these beautiful rings.

    So if you like your eggs scrambled or soft scrambled while your husband prefers his sunny side up, no problem! And maybe your children like theirs over easy, no problem!

    Easily make everyone’s favorite in one pan! No need to use several different pans or keep cleaning the same pan to make the next batch of eggs!

    This is especially helpful, when you’re trying to serve breakfast for everyone all at the same time.

    Only thing to think about here is, if you have a large family, maybe considered using a large skillet so everyone’s eggs can be cooked at the same time.

    Or use two large skillets.

    Toppings

    Looking for topping ideas? Consider adding:

    • Bacon bits
    • Chopped sausage
    • Broccoli
    • Scallions
    • Tomatoes
    • Other chopped veggies such as zucchini
    • Cheddar, monterey, queso fresco, etc.

    Get as creative as you like!

    Ingredients You Will Need:

    Yes of course, feel free to add whatever toppings your heart desires or keep it basic. Whatever you choose, these will still be delicious!

    For two servings:

    • 4 eggs
    • 1-2 bell peppers (depending on how big or small they are)
    • milk (if making scrambled eggs)
    • shredded cheddar (optional)
    • salt and pepper to taste
    • oil or butter for cooking eggs

    How to Make Bell Pepper Eggs

    First rinse the bell pepper to clean off any dirt or debris.

    On a cutting board, cut pepper into four ½ to 1 inch rings. Remove seeds and stem. (Depending on how big your bell pepper is, you may need a second bell pepper)

    Add about 1 tablespoon of oil to a skillet and spread oil around pan. (*Could also use 2 tablespoons of butter or non stick spray.)

    Over medium high heat, add the pepper rings and cook on each side for 2 minutes or until cooked but still crispy.

    *Note: You do not want the pepper rings to over cook so keep an eye on them.

    For Eggs Over Easy or Medium:

    Lower heat to medium.

    Add one egg to each pepper ring slowly and carefully.

    Top with salt and pepper to taste.

    Cover with a lid and cook eggs.

    For soft yolk, cook for 1-2 minutes.

    For harder yolk, cook for 3-5 minutes.

    NOTE: DO NOT POUR EGG QUICKLY INTO BELL PEPPER OR EGG WHITE WILL SEEP OUT FROM UNDERNEATH OF PEPPER, SO GO SLOW, THIS WILL CAUSE THE EGG TO IMMEDIATELY START COOKING SO THE EGG WILL NOT FLOW OUT FROM UNDERNEATH OF PEPPER.

    For Scrambled Eggs:

    In a small bowl, scrambled and add 2 tablespoons of milk.

    Lower heat to medium.

    Add one scrambled egg to each pepper ring slowly and carefully.

    Top with salt and pepper to taste.

    Top with shredded cheese if adding.

    Cover with a lid and cook eggs for a few minutes.

    Serve immediately! Enjoy!

    How to Bake Eggs

    Preheat oven to 400 degrees.

    I find it easiest to use the bottom of the bell pepper as this acts as a sort of a container to hold eggs without seeping out from bottom.

    So use 4 bell pepper bottoms.

    Once oven is heated through.

    Add eggs into bell pepper cups. Top with salt, pepper and other toppings if so desired.

    Cook bell pepper cups in the oven for about 15-20 minutes.

    Serve immediately.

    What to Serve Pepper Eggs With

    • Home fries
    • Sausage links or patties
    • Bacon strips
    • Spring salad
    • Platanos fritos (sweet plantains)
    • Garlic tostones (fried garlic green plantains)
    • Biscuits or toast

    Ingredients
