    Huevos con Papas (Mexican Style Eggs with Potatoes)

    Huevos con Papas (Mexican Style Eggs with Potatoes) are a delicious and easy breakfast.  Creamy scrambled eggs folded in between potatoes and mixed veggies and served with a delicious salsa verde or salsa of your choice. 

    Huevos con Papas (Mexican Style Eggs and Potatoes) made with mixed veggies, onions, scallions, potatoes and eggs topped on corn tortillas and served on a white platter with a side of salsa verde.

    Looking for a simple and delicious breakfast this weekend?  Or maybe a quick and tasty lunch or dinner?  Then you’ve come to the right place!

    These Huevos con Papas (Mexican Style Eggs with Potatoes) tacos can be whipped up in under 20 minutes.  Serve on warm corn or flour tortillas with a delicious salsa and you’re set!

    Choice to make these tacos meatless with mixed veggies or also add any meat of your choosing.

    Huevos con Papas (Mexican Style Eggs and Potatoes) made with mixed veggies, onions, scallions, potatoes and eggs topped on corn tortillas and served on a white platter with a side of salsa verde.

    Ingredients for Huevos con Papas (Mexican Style Eggs with Potatoes)

    • 6 eggs
    • 3 russet potatoes cubed
    • ½ cup of chopped mixed peppers (I used red, green and yellow peppers)+1 jalapeño pepper
    • ¼ cup chopped red onions
    • scallions
    • 12 corn or floured tortillas
    • oil, salt and pepper
    • Salsa of your choosing

    Feel free to add whatever veggies and meat you like.

    How to Make Huevos con Papas-Mexican Style Eggs with Potatoes

    Cube and chop the potatoes and veggies.

    In a skillet heat up 2 tablespoons of oil over medium heat.

    Add potatoes and season with salt and pepper.

    Cubed potatoes cooking for the eggs and potatoes.

    Mixed well and cover with a lid.  Cook for 5 minutes.

    Top with peppers and onions and stir well.

    Cook for another 5-10 minutes depending on how well done you like your veggies.

    Scramble eggs.

    Add eggs to cooked potatoes and veggies.

    When the edges start to set use a spatula or large spoon to gently swipe the edges of the pan to form large curds.  Continue to do this while pausing in between to allow eggs to cook some.  Fold the eggs until eggs are cooked but not overcooked.  Should only take about 2 minutes.
