    BBQ Chicken Tostadas

    These BBQ Chicken Tostadas will become a family favorite especially for the kiddos! Looking for a “Make A-Head Meal?” Here’s another one to add to your recipe binder. Or use a rotisserie chicken (or grilled chicken breasts) for a quick and easy meal on the table in 20 minutes.

    Who doesn’t love tostadas?! I know I do and I have a feeling so do you!

    Which leads me to think, these BBQ Chicken Tostadas may soon become one of your favorite go to quick tostada meals to make!

    It’s a fun, healthy and delicious meal and the kiddos will love this one!

    What Kind of Chicken Should I Use

    For this dish, it all starts with the chicken. You have a couple of options here:

    Are you looking for a quick meal?  Buy a cooked rotisserie chicken and shred. Then add your favorite barbeque sauce and simply heat through!

    Are you looking for a healthier option? Season a few pieces of chicken breasts, add your favorite barbeque sauce and grill.

    Enjoy making or prepping meals ahead of time? Then make my Instant Pot BBQ Chicken the day before and prep all your ingredients ahead of time!

    What Kind of Toppings Should I Add

    Once again, you have a few options here!  These bbq chicken tostadas are open to a few options!

    Like a little crunch in your tostadas? Consider topping your tostadas with a yummy rainbow coleslaw.

    Love cheese? Smother your tostadas with shredded pepper jack or mozzarella cheese then quickly melt in the oven.

    Love cheese and heat too? Smother your tostadas with shredded pepper jack or mozzarella cheese and top with jalapeño or serrano pepper slices.

    Want just a little bit of heat? Use medium or mild banana pepper slices instead.

    Or you can do as I have! Give it a Mexican twist! Top with chopped onions, chopped tomatoes, queso fresco and an avocado sour cream topping. YUM!

    Ingredients to Make BBQ Chicken Tostadas

    • Follow my Instant Pot BBQ Chicken recipe to make the chicken
    • homemade tostada shells or store bought (for homemade shells buy a package of corn tortillas)
    • ½ onion chopped
    • 2 roma tomatoes chopped
    • crumbled queso fresco
    • lime

    Simple Avocado Sour Cream Crema 

    • 1 Haas avocado (pitted and flesh scooped out)
    • ½ cup sour cream
    • 1 tablespoon lime juice
    • salt/pepper to taste

    How to Make BBQ Tostadas

    Follow my Instant Pot Bbq Chicken recipe.

    To Make Homemade Shells

    1. To make homemade tostada shells, simply add a tablespoon of oil to a skillet and heat over medium heat.  
    2. Add one or two corn tortillas at a time and brown on both sides until golden brown and crispy. Drain on paper towels.
    3. Let sit for a few minutes and the tortillas will harden.

    To Make Avocado Sour Cream Crema

    Add all the ingredients to a mini chopper and blend until smooth.

    To Make the Avocado Sour Crema by Hand

    First cut avocado in half and remove pit. Scoop out avocado flesh with a spoon and add to a small bowl.

    Mash the avocado flesh with a fork until no chunks are left.

    Add the sour cream, lime juice, salt and pepper to the bowl.

    Mix well until a smooth crema forms.

    Assemble Tostadas

    1. Place 6 tostadas on top of a baking sheet.
    2. Add a few tablespoons of the bbq chicken on top of the tostadas.
    3. Add chopped onions and tomatoes on top of chicken.
    4. Plenty of crumbled queso fresco to each tostada.
    5. Add a dollop of the avocado sour crema to each.
    6. Sprinkle a little extra bbq sauce to each tostada.
    7. Cut the lime into quarters and sprinkle a little lime juice on top to each.
    8. Serve with extra lime wedges and serve immediately.

    How to Prep and Make Ahead BBQ Chicken Tostadas

    Follow my Instant Pot BBQ Chicken recipe.

    Once chicken is cooked allow to cool for a few minutes and place in an airtight container.  Refrigerate.

    Make the tostada shells and place in a ziploc bag and seal tightly.

    Chop the tomatoes and onions and place in a small plastic container. Refrigerate.

    Make the avocado sour crema and refrigerate in a small container.

    When you are ready to eat tostadas…..

    • Preheat oven to 375° 
    • Heat chicken through in the microwave or on stove top.
    • Reheat tostada shells 2-5 minutes. (watch not to burn shells)

    That’s it! Now simply follow the steps above to finish assembling the chicken barbeque shells.

    Ingredients

    To Make the BBQ Chicken follow my Instant Pot BBQ Chicken recipe

    • homemade tostada shells or store bought

    Toppings

    • queso fresco crumbled
    • ½ white or red onion chopped
    • 2 roma tomatoes rinsed and chopped
    • 1-2 limes quartered

    Simple Avocado Sour Cream Crema

    • If you like, sprinkle a little extra bbq sauce to each tostada.
    • Cut the lime into quarters and sprinkle a little lime juice on top to each.
      Serve tostadas with extra lime wedges and serve immediately.

    Notes

    Instead of making Instant Pot BBQ Chicken for this recipe, you can also choose to buy a Rotisserie chicken (follow instructions in post).
    For an even healthier option…grill or bake chicken breasts (follow instructions in post).
