    Tortilla de Plátano (Plantain Omelette)

    Instead of your traditional eggs and pancakes this weekend, make this delicious plantain omelette!

    If you have been following the blog for awhile now, then you already know I love all things plantains! Green plantains, medium ripe plantains and even the fully ripe ones that look like they should be thrown away!

    Love love love plantains! So this here omelette is absolutely no exception!

    Pssst! Don’t know what to do with those plantains you think are no longer good? Do not throw them away! This recipe is perfect for overripe plantains! Plantain Puff Puff Recipe (Buñuelos de Platano).

    To make a scrumptious fluffy plantain omelette, all you need is one ripe plantain.

    Use a plantain that has yellow skin and some black spots. Plus, make sure the plantain feels somewhat soft to the touch.

    Ingredients

    • 4 eggs
    • ¼ cup milk
    • 1-2 tbps butter
    • ½ red pepper, rinsed, seeds removed and chopped
    • ½ yellow pepper, rinsed, seeds removed and chopped
    • 1 garlic, minced
    • ½ white onion, chopped
    • 1 plantain, peeled and cut into slices
    • shredded cheese of choice for topping
    • salt and pepper to taste
    • ½ cup vegetable oil for frying plantain

    Optional– can add bacon, sausage or ham to omelette

    How to Make Tortilla de Plátano

    A plate full of cooked plantains ready for plantain omelette.
    1. Cut both ends of plantain and score lengthwise using a knife, making sure not to cut into plantain flesh.
    2. Peel and slice plantain and cut into ¼ inch thick slices.
    3. In a skillet over medium heat, add about ½ cup of vegetable oil.
    4. Add the plantain slices to skillet and cook on both sides until golden brown.
    5. Remove plantain slices from skillet and drain on paper towels.

    1. Rinse peppers, remove seeds and cut into slices or cubes.
    2. Peel and cut onion into cubes. Peel and mince garlic.
    3. In another skillet, add one to two tablespoons of butter over medium heat until melted.
    4. Add peppers and onions, stir and cook until onions are translucent.
    5. Then add plantain slices to skillet and lower heat to medium low.
    6. Add minced garlic, stir ingredients. Cook garlic for 1 minute. Be careful not to burn it.

    1. In a bowl, whisk eggs, add milk, salt and pepper to taste. Add eggs to skillet.
    2. Cook omelette for a few minutes and then cover with a lid or aluminum foil.
    3. Once omelette has cooked and set, top with cheese.
    4. Allow cheese to melt then serve immediately.

    Serve tortilla de plátano by itself or with a side of home fries and toast.

    What if I Don’t Like Peppers and Onions?

    Alternatively, you can make this plantain omelette with just the plantain slices and exclude the peppers and onions.

    You can also exclude the shredded cheese.

    Alternatively you can also add sausage, ham or bacon to omelette.

    Ingredients

    • 4 eggs whisked
    • ¼ cup milk
    • 1-2 tablespoon butter
    • ½ red pepper rinsed, seeds removed and chopped
    • ½ yellow or green pepper rinsed, seeds removed and chopped
    • 1 garlic minced
    • ½ white onion chopped
    • 1 ripe yellow plantain (with black spots) peeled and cut into ¼ inch slices

    • Cook omelette for a few minutes and then cover with a lid or aluminum foil.
    • Once omelette has cooked and set, top with cheese.
      Allow cheese to melt then serve immediately.
