    Fajitas de Camarones (Shrimp Fajitas) make a perfect meal anytime of the week. Delicious, quick and easy! Serve with corn or flour tortillas and all your favorite toppings!

    I think it’s fair to say, we all love quick, easy meals we can make in 30 minutes or less, right?! But one thing always has to fit the bill, and that of course is, it must be delicious! These fajitas fit the bill for sure! Total YUM!

    So if you’re a fan of fajitas and would love to eat them more often, skip the Mexican restaurant and make these shrimp fajitas right from the comfort of your home!

    A fantastically delicious, skillet meal made in 30 minutes or less.

    The shrimps are sautéed to tender perfection in a bed of colorful peppers, onions, garlic and a delicious blend of aromatic smoky spices.

    If you enjoy spicier fajitas, add a chopped serrano, jalapeño pepper or cayenne powder to the mix for extra heat.

    Toppings

    If you’re not crazy about toppings, no worries, these fajitas are so flavorful and delicious all on their own.

    Otherwise, add as many toppings as you would like.

    I added avocado salsa verde and Mexican crema to mine!

    Ingredients for Fajitas de Camarones (Shrimp Fajitas)

    • 1 ½ pounds large shrimp
    • 1 tablespoon chili powder
    • ½ teaspoon ground cumin
    • 1 teaspoon smoked paprika
    • 5 garlic cloves, minced
    • ½ teaspoon oregano
    • 1 teaspoon onion powder
    • 2 tablespoon lime juice (1 lime)
    • handful fresh cilantro, chopped
    • 2 tablespoon olive oil
    • salt and pepper to taste or about ½ teaspoon of each
    • 1 onion, sliced and cut into half moons
    • 3 bell peppers (looks pretty with red, yellow and orange or green but use what use have)
    • 1 ½ tablespoon olive oil or vegetable oil for cooking peppers

    For serving fajitas

    • flour or corn tortillas
    • lime wedges
    • sour cream, avocado slices or any of the salsas above

    How to Make Fajitas de Camarones

    • Shrimps marinating in a bowl.
    • Onions and yellow, green and red peppers sauteing in a cast iron skillet.
    • Cooked Shrimp Fajitas in a cast iron skillet, topped with chopped cilantro and lime wedges.

    Prepare Shrimp: Rinse shrimp. Peel and devein. Remove tails. (Note: I left mine on for presentation) Add shrimps to a large bowl.

    Season Shrimps: Add garlic, chili powder, cumin, paprika, onion powder, oregano, salt, pepper and oil. Toss and combine shrimps well with the spices.

    Veggies: In a skillet over medium heat, add oil, peppers and onions. Cook for 10-15 minutes, stirring occasionally or until onions are translucent and peppers have started to soften.

    Remove from Pan: Remove veggies from pan and set aside.

    Cook Shrimps: Add shrimps and cook for about 5 minutes, stirring every other minute. Cook shrimps until pink and no longer translucent.

    Combine Shrimps and Veggies: Return peppers and onions back to skillet. Top with lime juice and chopped cilantro. Stir and combine well. Taste and add more salt and pepper if needed. Turn heat off.

    Serve: Warm several flour or corn tortillas in the microwave for 30 seconds or heat in a separate skillet. Top shrimp fajitas on top of tortillas with sour cream, avocado slices or salsas mentioned in post.

    Alternatives to Cooking Fajitas

    You can also grill the shrimps.

    1. Skewer the seasoned shrimp and grill for a few minutes on each side.
    2. Grill the peppers and onions separately.
    3. Remove shrimps from skewers and combine with peppers and onions. Toss with lime juice and cilantro and proceed with serving instructions.

    Alternatively, you can chop the peppers and onions into chunks and skewer with the shrimps. Grill to your liking. Once cooked, remove from skewers and toss with lime juice and cilantro. Proceed with serving instructions.

    How about Cooking on a Sheet Pan?

    1. Preheat oven to 400 degrees. Season shrimps as instructed. Add the shrimps to one side of sheet pan and peppers and onions to the other side.
    2. Cook shrimps for about ten minutes or so, depending on how large your shrimps are. Remove shrimps from pan, cover with foil and set aside.
    3. Continue cooking peppers and onions until desired tenderness.
    4. Once cooked, combine all together and serve!

    Can I Make Fajitas de Camarones in Foil Packets?

    Sure can!

    1. Cut four sheets of aluminum foil about 12 inches long.
    2. Divide the peppers, onions and seasoned shrimps into four equal portions. Place in center of foil.
    3. Top each foil packet with lime juice and a teaspoon of olive oil.
    4. Fold the sides of the foil over shrimps, peppers and onions covering completely and sealing closed.
    5. Cook in a preheated oven of 400 degrees or place on grill. Cook for 10-15 minutes.
    6. Once cooked, serve individual packets with chopped cilantro on the side so everyone can add as much or as little as they like.
    7. Offer desired toppings buffet style for everyone to enjoy!

    Notes

    I used yellow, red and green peppers but any color pepper will be fine. Use what you have available to you.
    Add a chopped serrano pepper, jalapeno pepper or cayenne pepper powder to fajitas for a spicier blend.
